Beef Tournedos with Brandy and Peppercorn Sauce

Ingredients

  • 1 tbsp of mixed peppercorns
  • 1 tbsp of olive oil
  • 1 clove of garlic
  • 1 french shallot
  • 1 cup of white wine
  • 1/4 cup of Brandy
  • 1 1/4 cup of demi-glace sauce
  • 1/2 cup of 35% cooking cream
  • 4 Dalisa beef tournedos
  • 1 tbsp of butter

Preparation

Beef tournedos

  1. For best results, take the beef tournedos out of the fridge and let sit for 30 minutes before cooking.
  2. In an oven-safe skillet, heat the butter. Add tournedos and sear on each side for about 2 minutes or until golden brown. Sear the bacon.
  3. In a preheated oven to 375°F, continue cooking the tournedos until desired doneness.
