Dalisa beef tournedos with apple and blue cheese topping

Ingredients

Creamy fennel salad (side)

  • fennel bulbs, minced

  • 2 tablespoons 

    grated carrot

  • 1 tablespoon 

    of mayonnaise

  • 1 tablespoon 

    of plain Greek yogurt

  • of parsley

  • 1/2 

    of whole grain mustard

  • 1/2 cup 

    of cider vinegar

  • 1 tablespoon 

    of sugar

Preparation

Tournedos and topping

  1. Sear the tournedos in butter for approximately 1 minute on each side. Bake in 350° oven until desired doneness (approximately 10 minutes for medium).
  2. Cook the apples and onions in a pan with olive oil until apples are tender, approximately 5 minutes. Add the crumbled blue cheese, parsley and chives and continue cooking for 1 minute to combine flavours.
  3. Garnish your cooked tournedos with the topping and serve with the creamy fennel salad.
