In a large bowl, mix all the ingredients except coqs au porc and fresh herbs. Mix well. Add coqs au porc and marinate for at least 1 hour.
Preheat the oven to 350. In an oven-safe skillet, heat oil and sear the coqs au porc on each side. Transfer the skillet to the oven and cook for about 15 minutes.
In a saucepan, bring coconut milk to a boil. Add rice and mix well. Reduce heat, cover and let simmer for 15 minutes, or until the coconut milk is absorbed.
