In a large skillet, heat olive oil over medium heat. Remove the membrane from the sausages and cook the flesh, breaking it up with a wooden spoon, for about 5 minutes.
Add the onion and peppers. Cook for 3 minutes. Lower the heat and add the garlic, olives and spices. Cook over low heat for 5 minutes.
Meanwhile, cook the pasta in a large pot of salted boiling water. Drain and keep 1 cup of cooking water.
Add 1/4 cup of cooking water to the sausage mixture. Add the Parmesan and mix well. Add more water and spices as needed.
