Penne with Olive and Sausage

Ingredients

  • 1 tbsp 

    of olive oil

  • Dalisa Italian sausages (Hot or Mild)

  • 1 small 

    onion, chopped

  • yellow bell pepper, cut into strips

  • green bell pepper, cut into strips

  • garlic cloves, minced

  • 1/2 cup 

    of pitted olives, sliced

  • 1 tbsp 

    of dried oregano

  • Salt and pepper

  • 1/4 cup 

    of Parmesan

  • 1 cup 

    of cooking water

  • 4 cups 

    of penne

Preparation

  1. In a large skillet, heat olive oil over medium heat. Remove the membrane from the sausages and cook the flesh, breaking it up with a wooden spoon, for about 5 minutes.
  2. Add the onion and peppers. Cook for 3 minutes. Lower the heat and add the garlic, olives and spices. Cook over low heat for 5 minutes.
  3. Meanwhile, cook the pasta in a large pot of salted boiling water. Drain and keep 1 cup of cooking water.
  4. Add 1/4 cup of cooking water to the sausage mixture. Add the Parmesan and mix well. Add more water and spices as needed.
  5. Add the penne into the sauce, mix well and serve.
