Remove the casing from the sausages to keep only the flesh. Chop the fresh herbs. Remove the stems of the mushrooms.
In a bowl, combine the sausage meat, parsley, chives and white wine.
Place the mushrooms without stems in an ovenproof dish. Sprinkle a little breadcrumbs inside the mushrooms. Divide the sausage mixture among each mushroom.
On top of the sausage mixture in the mushroom, add mozzarella, Parmesan, then breadcrumbs.
