Bake the potatoes in the oven until the flesh is tender, but not completely cooked through. Let cool and scoop out the flesh, leaving a thin layer of potatoes on the inside.
Add the sausage's flesh in each potato. Return to the oven for 10 to 15 minutes or until the sausages are cooked.
In a bowl, combine sour cream, bacon and green onion.
Garnish the potatoes with the sour cream mix. Top with grated cheese. Return to the oven for 3 to 4 minutes or until the cheese is melted.
